This is one of my favourite recipes from the restaurant and the added joy is that it’s so quick and easy to prepare.
You’ll need..
- Ripe and ready avocados
- Smoked cheese
- Spring onion
- Quinoa
- Vegetable stock
And for the oil free dressing…
- Mustard
- Vinegar
- Honey
- Parsley
Method…
Halve the avocados and scoop out the insides (easiest way to do this is to cut horizontal and vertical lines through the flesh and then squeeze the skins, the perfect little chunks should pop right out for you).
Mix with the diced cheese, chopped spring onion and the quinoa that has been cooked in the vegetable stock (bring to the boil and then simmer for 10 to 12 minutes). Pop the mixture back into the avocado skins and heat in an oven for about 10 or 15 minutes just to warm the mix (low heat of about 150c) and the cheese melts beautifully or you can pop them under the grill and the top of the mix will crisp nicely.
Combine the 4 ingredients for the dressing in a shaker and drizzle at will. Delicious!
We love to serve these with sweet potato fries but they’ll work with almost anything.
